Ingredients:
4 Tulingan/Mackerel/Bonito (should be around 1 kilogram)
2 raw mangoes, thinly sliced, bone discarded
2 eggplants, sliced
2 cups water
2 chilli peppers, sliced (optional)
Salt and pepper to taste
Instructions:
- Lay out the sliced mangoes in a pan or wok (I decided to use a wok).
- Put in the chilli peppers, which is optional.
- Slit the fish on both sides and lay on top of the sliced mangoes.
- Add the 2 cups of water.
- Salt and pepper to taste.
- Let it boil and then simmer, uncovered then wait until the water reduced to half.
- When water has reduced, add in the eggplants and cover the pan or wok and continue simmering until the eggplants get cooked.
- Once the eggplants are cooked, remove the cover and continue simmering for 5 minutes.
- Serve immediately or set aside for later.
