Pasta in Seafood Marinara

Serves: 5

Ingredients:
300 gms fettuccine pasta
1/4 kilo squid, sliced thinly
1/4 kilo clams
1/4 kilo mussels
10 tomatoes, chopped
5 cloves garlic, coarsely chopped
2 dried chilli peppers, chopped
1 bay leaf
Finely chopped fresh parsley
Finely chopped fresh basil
2 tbsp extra virgin olive oil
Salt and pepper to taste






Instructions:

  • Thoroughly clean the squid and remove the ink. Slice thinly.
  • Thoroughly clean the clams and mussels then soak in water for 30 minutes to remove the sand inside.
  • In a pot, boil heavily salted water, around 2 liters.
  • Add the pasta when boiling then cook until al dente.
  • Now let's make the marinara sauce. In a saucepan, saute garlic, pepper and bay leaf in a low flame.
  • Let the garlic brown a little bit but be careful not to burn it.
  • Add the chopped tomatoes.
  • Add the basil and parsely.
  • Simmer and crush the tomatoes with the spatula when it's already tender.
  • Salt and pepper to taste.
  • Let the sauce simmer until all the liquid has evaporated.
  • After that, add the squid, clams and mussels and increase the heat to medium. 
  • Do not add water. Let the clams and mussels give out their own juices.
  • Cover the saucepan and let it simmer until the shells open up and get cooked, around 5 minutes.
  • Pour the sauce over cooked pasta and serve.
  • Cheese and seafood usually do not go together so I am not putting cheese on my seafood pasta.

Salmon Rice

Serves: 6 to 8 persons


Ingredients:

2 fillets of Salmon, skin intact and deboned
5 cups rice
6 cups water
2 tbls good soy sauce for broth
2 tbls good soy sauce for marinade
1 tbl Mirin
1 shrimp bullion or fish stock
Pinch of black pepper
Salt to taste

 
Use a good soy sauce


Instructions:

  • Marinate the Salmon with 2 tbls of soy sauce and refrigerate.
 
Marinating the salmon

  • While marinating, place 6 cups of water in a pot.
  • Add the soy sauce, Mirin, black pepper, salt, and shrimp bullion.
  • Boil for 3 minutes and turn off heat.
 
Include salmon trimming into the broth for added flavor.

  • Meanwhile, scoop 5 cups of rice and rinse.
  • Place into the rice cooker the rice, broth, and then the marinated salmon.
 
Place the marinated salmon into the rice before cooking

  • Cook.
  • When rice is almost cooked, crush the salmon into flakes and mix well with the rice.
  • Cover the rice cooker until the rice is fully cooked.
  • Serve hot.

Tuna Salpicao

Serves: 2 - 3 persons

Ingredients:
300 gms Tuna fillet
3 tbls Knorr Liquid Seasoning
6 cloves of garlic, chopped
2 tbls extra virgin olive oil
1 tbls butter

 
Knorr liquid seasoning


Instructions:
  • Slice the tuna into cubes and pour the 3 tbls Knorr seasoning.
  • Marinate the tuna for 30 minutes to 1 hour in the refrigerator.
  • Heat olive oil and butter to the pan in a medium high heat.
  • When oil is already hot, saute the garlic.
  • After one minute, add the tuna together with the marinade and cook for 2 to 3 minutes.
  • Keep in mind that the garlic will burn if cooked for too long.
  • Plate and sprinkle with a little bit more of the Knorr Liquid Seasoning.

  • Serve immediately.
