Sinaing na Tulingan sa Mangga (Boiled Mackerel using Raw Mango)

Since I have a bunch of raw mangoes at home, I decided to use them in place of kamias (ginger lily) to produce a sour broth.

Ingredients:
4 Tulingan/Mackerel/Bonito (should be around 1 kilogram)
2 raw mangoes, thinly sliced, bone discarded
2 eggplants, sliced
2 cups water
2 chilli peppers, sliced (optional)
Salt and pepper to taste

Instructions:
  • Lay out the sliced mangoes in a pan or wok (I decided to use a wok). 



  • Put in the chilli peppers, which is optional.
  • Slit the fish on both sides and lay on top of the sliced mangoes.
 

 

  • Add the 2 cups of water.
  • Salt and pepper to taste.
  • Let it boil and then simmer, uncovered then wait until the water reduced to half.

  • When water has reduced, add in the eggplants and cover the pan or wok and continue simmering until the eggplants get cooked.


    • Once the eggplants are cooked, remove the cover and continue simmering for 5 minutes.
    • Serve immediately or set aside for later.
